It is with sadness that we announce the passing of John Mercieca, known to many of his friends and colleagues as "John Herb," in early January 2026. He was 61 years old.
A nearly lifelong resident of London, Ontario, John dedicated nearly fifty years of his life to the culinary arts. He was a chef of the old school—hardworking, disciplined, and deeply knowledgeable. He spent decades running kitchens with precision and took immense pride in his craft. He was particularly known among his colleagues for his exacting standards regarding his tools and his unwavering work ethic. Beyond the kitchen, John was a man of keen intelligence and strong character.
He was an avid reader with a deep appreciation for literature and music. He possessed a sharp wit, a formidable memory, and a loyalty to his friends that spanned decades. Whether discussing history, art, music, local politics, or the complexities of life, John left a lasting impression on those fortunate enough to engage with him. He was predeceased by his parents.
As he passed without immediate family, he is fondly remembered and survived by a close circle of devoted friends who became his chosen family over the years, and his loyal pup, Lola.

The Funeral Service will be conducted in the O'Neil Funeral Home, 350 William Street, London, at 10:00 a.m., Wednesday, 14 January 2026, Rev. Quenton Little Officiating. Interment to follow in Woodland Cemetery, London, Ontario.
